- 1/2 cup plain yoghurt (no xylitol)
- 1/4 cup apple, peeled and finely grated
- 1 cup oat flour
- 1 egg
- 1 tablespoon olive oil

- Preheat oven to 170Β°C (340Β°F).
- Mix yoghurt, grated apple, beaten egg, and olive oil.
- Add oat flour and stir until a smooth batter forms.
- Pour into a lined 20cm square baking tin β spread evenly to about 1cm thick.
- Bake for 15 minutes until just set through.
- Cool in the tin, then cut into small squares.

Refrigerate in an airtight container for up to 5 days. The yoghurt content means these should always be kept refrigerated.
