- 1 cup tapioca flour
- 1/2 cup cooked chicken, finely minced
- 1 egg
- 1 tablespoon olive oil
- 2 tablespoons chicken broth (no onion/garlic)

- Preheat oven to 175Β°C (350Β°F).
- Finely mince or shred the cooked chicken.
- Mix tapioca flour and chicken in a bowl.
- Beat egg with olive oil and chicken broth.
- Add wet ingredients to dry and mix until smooth β tapioca flour creates a slightly sticky dough.
- Drop very small portions (about 1 teaspoon each) onto a lined baking tray.
- Bake for 18-20 minutes until lightly golden and crisp.
- Cool completely β they'll crisp up further.
