🥘 Ingredients
- 1 cup coconut flour
- 1/2 cup mashed sweet potato (cooked and cooled)
- 2 eggs (coconut flour needs extra eggs for binding)
- 2 tablespoons coconut oil, melted
- 1/4 cup water
👩🍳 Instructions
- Preheat oven to 170°C (340°F).
- Mix coconut flour in a bowl — note it absorbs a lot of liquid.
- Add mashed sweet potato and mix.
- Beat eggs and add along with coconut oil.
- Add water gradually until a workable dough forms — it may seem dry at first but will come together.
- Roll out to about 8mm thick between two sheets of baking paper.
- Cut into shapes and place on a lined baking tray.
- Bake for 23-25 minutes until firm and golden.
- Cool completely on a wire rack.
