π₯ Ingredients
- 1 cup pumpkin puree (plain, not pie filling)
- 1 1/2 cups oat flour
- 1/2 teaspoon ground ginger
- 1 egg
- 1 tablespoon coconut oil, melted

- Preheat oven to 170Β°C (340Β°F).
- Mix pumpkin puree with beaten egg and coconut oil.
- Combine oat flour and ground ginger.
- Add dry ingredients to wet and mix until a soft dough forms.
- Roll out to about 1cm thick.
- Cut into small squares or use a cookie cutter.
- Place on a lined baking tray.
- Bake for 20-22 minutes until just firm on the outside.
- Cool on the tray β they'll stay beautifully soft inside.

Store in an airtight container in the fridge for up to 10 days. Freeze for up to 3 months.

Pumpkin is rich in soluble fibre which helps regulate digestion β it can help with both diarrhoea and constipation. Ginger has natural anti-nausea and anti-inflammatory properties. Oats provide gentle, easily digestible fibre.
