🥘 Ingredients
- 1 cup wholemeal flour
- 1/2 cup oat flour
- 1 ripe banana, mashed
- 1/4 cup natural peanut butter (no xylitol)
- 1 egg
- 1 tablespoon honey
👩🍳 Instructions
- Preheat oven to 175°C (350°F).
- Mash banana thoroughly in a bowl.
- Add peanut butter, egg, and honey, mixing until smooth.
- Gradually add both flours, stirring until a soft dough forms.
- Roll out to about 1cm thick on a floured surface.
- Cut into strips about 8cm x 2cm.
- Place on a lined baking tray.
- Bake for 18-20 minutes until just set — don't overbake or they'll be crunchy instead of chewy.
- Cool for 10 minutes — they'll firm up slightly while staying soft inside.

Store in an airtight container for up to 1 week, or refrigerate for up to 2 weeks. Freeze for up to 3 months.
