- 2 tbsp coconut oil (softened)
- 2 tbsp peanut butter (xylitol-free)
- ΒΌ cup oat flour
- Desiccated coconut for rolling

- Mix carob powder, coconut oil, peanut butter, and oat flour.
- Roll into small truffle-sized balls.
- Roll each ball in desiccated coconut.
- Chill 1 hour.
