🥘 Ingredients
- 200g kangaroo mince
- 1/2 cup mashed sweet potato (cooked and cooled)
- 1/2 cup coconut flour
- 1 egg
- 1 tablespoon olive oil
👩🍳 Instructions
- Preheat oven to 170°C (340°F).
- Brown kangaroo mince in a pan — it's very lean so won't produce much fat. Let cool.
- Crumble the mince finely.
- Mix mashed sweet potato, beaten egg, and olive oil together.
- Add coconut flour and crumbled kangaroo, mixing until a firm dough forms.
- Roll into small balls about 2cm diameter and flatten.
- Place on a lined baking tray.
- Bake for 23-25 minutes until firm.
- Cool completely on a wire rack.

Refrigerate in an airtight container for up to 1 week. Freeze for up to 3 months.
