🥘 Ingredients
- 1 1/2 cups oat flour
- 1/2 cup dried cranberries, finely chopped
- 1 tablespoon fresh mint, finely chopped
- 1 egg
- 2 tablespoons coconut oil, melted
- 1/4 cup water
👩🍳 Instructions
- Preheat oven to 170°C (340°F).
- Combine oat flour, chopped cranberries, and mint in a bowl.
- Beat egg with coconut oil and add to dry mixture.
- Add water gradually until dough comes together.
- Roll out to 6mm thick.
- Cut into small round shapes — about 3cm diameter.
- Place on lined baking trays.
- Bake for 25 minutes until firm and golden.
- Cool completely before serving.
