π₯ Ingredients
- 1 cup wholemeal flour
- 1/2 cup desiccated coconut
- 1/2 cup fresh or frozen blueberries
- 1 egg
- 2 tablespoons coconut oil, melted
- 2 tablespoons water
π©βπ³ Instructions
- Preheat oven to 170Β°C (340Β°F).
- Mix flour and desiccated coconut in a bowl.
- Lightly crush half the blueberries and leave the rest whole.
- Add all blueberries, beaten egg, coconut oil, and water to dry ingredients.
- Mix until a soft, purple-speckled dough forms.
- Drop teaspoon-sized portions onto a lined baking tray.
- Flatten gently with the back of a spoon.
- Bake for 18-20 minutes until just set.
- Cool completely β the blueberries will set into jammy pockets.

Store in an airtight container in the fridge for up to 1 week. Freeze for up to 3 months.
