π₯ Ingredients
- 1 cup oat flour
- 1/3 cup fresh or frozen blueberries
- 2 tablespoons coconut oil, melted
- 1 egg
- 2 tablespoons plain yoghurt
π©βπ³ Instructions
- Preheat oven to 170Β°C (340Β°F).
- Lightly mash half the blueberries, leave the rest whole.
- Mix oat flour in a bowl.
- Combine all blueberries, coconut oil, egg, and yoghurt.
- Add wet to dry and mix until a soft batter forms.
- Drop small spoonfuls onto a lined baking tray.
- Bake for 13-15 minutes until barely set β keep them very soft.
- Cool on the tray.

Refrigerate in an airtight container for up to 5 days. Freeze for up to 3 months.
