- 1 cup almond flour (also called almond meal)
- 1 ripe banana, mashed
- 1 egg
- 1 tablespoon coconut oil, melted
- 1/2 teaspoon cinnamon

- Preheat oven to 170Β°C (340Β°F).
- Mash banana thoroughly until smooth.
- Mix in beaten egg and melted coconut oil.
- Add almond flour and cinnamon, stirring until combined.
- The dough will be softer than regular cookie dough β that's normal.
- Drop tablespoon-sized portions onto a lined baking tray.
- Flatten slightly with the back of a spoon.
- Bake for 20-22 minutes until golden and firm.
- Cool completely on the tray β they firm up as they cool.

Store in an airtight container for up to 1 week. Refrigerate for up to 2 weeks. Freeze for up to 3 months.
