- 2 large sweet potatoes
- 1 tsp coconut oil (for greasing)

- Preheat oven to 120Β°C (250Β°F).
- Wash sweet potatoes and slice lengthwise into 5mm strips.
- Lightly grease a baking rack or tray with coconut oil.
- Arrange strips in a single layer β don't overlap.
- Bake for 2.5-3 hours, flipping halfway.
- They should be dry and chewy, not crispy.
- Let cool completely on a wire rack.

Store in an airtight container at room temperature for up to 2 weeks. Refrigerate for up to 3 weeks. Can freeze for up to 3 months.
