  • 400g salmon fillet (boneless, skinless)

  1. Preheat oven to 80Β°C (175Β°F).
  2. Slice salmon into strips about 5mm thick.
  3. Lay on wire racks over lined baking trays.
  4. Dry for 3-4 hours until firm and leathery.
  5. They should bend but not feel mushy.
  6. Cool completely.

Fridge in airtight container for up to 2 weeks. Freeze for up to 2 months. Fish jerky has shorter shelf life than meat jerky due to oil content.
