- 400g duck breast (skinless)

- Preheat oven to 80Β°C (175Β°F).
- Remove ALL skin and visible fat from duck.
- Slice into thin strips, 3-4mm.
- Lay on wire racks over baking trays.
- Dry for 3-4 hours until firm and chewy.
- Cool completely.

Fridge in airtight container 2 weeks. Freeze 3 months.
