- 250g lean beef (thinly sliced)
- 1 large sweet potato (cut into thin strips)

- Cut sweet potato into thin strips.
- Pound or slice beef very thin.
- Wrap each beef slice around a sweet potato strip.
- Secure with a toothpick if needed (remove before serving!).
- Place on wire racks.
- Dry for 4-5 hours until firm throughout.
- Remove any toothpicks and cool completely.
