Dehydrated Sweet Potato & Beef Roll-Ups

These roll-ups are a fun twist on regular jerky — thin slices of beef wrapped around sweet potato strips and dried together. The sweet potato caramelises slightly during drying, creating an irresistible sweet-savoury combination. They're a bit more work than plain jerky, but the result is a premium treat worth the effort.

🥘 Ingredients

  • 250g lean beef (thinly sliced)
  • 1 large sweet potato (cut into thin strips)

👩‍🍳 Instructions

  1. Preheat oven to 80°C (175°F).
  2. Cut sweet potato into thin strips.
  3. Pound or slice beef very thin.
  4. Wrap each beef slice around a sweet potato strip.
  5. Secure with a toothpick if needed (remove before serving!).
  6. Place on wire racks.
  7. Dry for 4-5 hours until firm throughout.
  8. Remove any toothpicks and cool completely.

💚 Storage

Fridge in airtight container 2 weeks. Freeze 3 months.
