- 500g chicken breast

- Preheat oven to 80Β°C (175Β°F).
- Slice chicken into thin strips, about 3-4mm thick.
- Lay on wire racks over baking trays.
- Dry for 3-4 hours until firm and leathery.
- Should bend without snapping.
- Cool completely.

Airtight container 2 weeks. Fridge 3 weeks. Freeze 4 months.

Pure protein with virtually no fat or carbs. Drying concentrates protein β dried jerky is about 80% protein. No additives make this safer than many commercial jerkies.

- Slice against the grain for easier chewing
