The small pasta shapes make this easy to eat and digest, while the hidden vegetables boost the nutritional value. Ingredients

  • 500g turkey mince
  • 1 egg
  • 1/2 cup oats (rolled, finely ground)
  • 1/2 cup zucchini, grated
  • 1/2 cup carrots, grated
  • 1 cup small pasta (macaroni or shells)
  • 1 cup peas
  • 2 cups low-sodium bone broth
  • 1 tablespoon parsley, chopped

Instructions

  1. Cook the pasta in water until al dente. Drain and set aside.
  2. In a large bowl, combine turkey mince, egg, ground oats, grated zucchini, and grated carrots. Mix well.
  3. Form the mixture into small meatballs — about 2–3 cm each.
  4. Heat a large pan over medium heat. Cook the meatballs for 8–10 minutes, turning occasionally, until golden and cooked through.
  5. In a pot, warm the bone broth and add the peas. Cook for 3–4 minutes.
  6. Combine the meatballs, pasta, peas, and broth in a large bowl. Sprinkle with parsley.
  7. Allow to cool before serving.

Storage

Refrigerate for up to 4 days. Meatballs freeze beautifully for up to 3 months — freeze them on a tray first, then transfer to a bag.
