Ingredients
- 600g beef stewing chunks
- 2 beef marrow bones
- 3 cups water
- 2 medium sweet potatoes, cubed
- 2 cups carrots, chunked
- 1 cup celery, chopped
- 1 cup green beans, chopped
- 1 tablespoon apple cider vinegar
- 1 teaspoon turmeric
Instructions
- Place beef chunks and marrow bones in the slow cooker.
- Add water and apple cider vinegar (helps extract minerals from bones).
- Add sweet potato, carrots, and celery.
- Sprinkle in the turmeric.
- Cook on LOW for 6–8 hours until the beef is fall-apart tender.
- In the last 30 minutes, add the green beans.
- Remove the marrow bones before serving (scrape any marrow back into the stew).
- Allow to cool and portion into containers. The broth will become gelatinous when refrigerated — this is a good sign!
Storage
