Ingredients
- 400g turkey breast, diced
- 1/2 cup quinoa
- 1 cup water
- 1 cup green beans, chopped
- 1/2 cup carrots, diced
- 1/2 cup broccoli, finely chopped
- 1 tablespoon olive oil
- 1 teaspoon parsley, chopped
Instructions
- Cook quinoa in water for 15 minutes until fluffy. Set aside.
- Cook diced turkey in a non-stick pan for 6–7 minutes until cooked through.
- Steam green beans, carrots, and broccoli until tender (5–6 minutes).
- Combine quinoa, turkey, and steamed vegetables.
- Drizzle with olive oil and sprinkle with parsley.
- Mix well and allow to cool before serving.
Storage
Refrigerate for up to 4 days. Freeze for up to 3 months.
