Ingredients

  • 400g kangaroo mince
  • 1 cup pumpkin puree
  • 1/2 cup brown rice, cooked
  • 1/2 cup kale, finely chopped
  • 1/4 cup blueberries
  • 1 teaspoon turmeric
  • 1/2 teaspoon ginger, grated
  • 1 tablespoon fish oil
  • 1 tablespoon coconut oil

Instructions

  1. Cook brown rice until soft. Set aside.
  2. Heat coconut oil in a pan over medium heat.
  3. Cook kangaroo mince for 4–5 minutes until done. Don't overcook.
  4. Add turmeric and ginger, stir through.
  5. Add finely chopped kale and cook for 1–2 minutes until wilted.
  6. Combine kangaroo mixture with rice and pumpkin puree.
  7. Add blueberries and drizzle with fish oil.
  8. Mix well and cool before serving.

Storage

Refrigerate for up to 4 days. Freeze for up to 3 months.
