Ingredients
- 400g kangaroo mince
- 1 cup pumpkin puree
- 1/2 cup brown rice, cooked
- 1/2 cup kale, finely chopped
- 1/4 cup blueberries
- 1 teaspoon turmeric
- 1/2 teaspoon ginger, grated
- 1 tablespoon fish oil
- 1 tablespoon coconut oil
Instructions
- Cook brown rice until soft. Set aside.
- Heat coconut oil in a pan over medium heat.
- Cook kangaroo mince for 4–5 minutes until done. Don't overcook.
- Add turmeric and ginger, stir through.
- Add finely chopped kale and cook for 1–2 minutes until wilted.
- Combine kangaroo mixture with rice and pumpkin puree.
- Add blueberries and drizzle with fish oil.
