Ingredients
- 500g chicken thigh (boneless, skinless), diced
- 2 cups low-sodium bone broth
- 1 cup sweet potato, cubed
- 1 cup carrots, sliced
- 1/2 cup green beans, chopped
- 1/2 cup pumpkin puree
- 1 teaspoon turmeric
- 1/2 teaspoon ground ginger
- 1 tablespoon fish oil
- 1 tablespoon coconut oil
Instructions
- Heat coconut oil in a large pot over medium heat.
- Add diced chicken and cook for 5–6 minutes until sealed.
- Add sweet potato, carrots, turmeric, and ginger. Stir to coat.
- Pour in bone broth and bring to a gentle boil.
- Reduce heat, cover, and simmer for 20–25 minutes until vegetables are very soft.
- Add green beans and pumpkin puree in the last 5 minutes.
- Remove from heat, stir in fish oil, and allow to cool.
- The stew should be soft enough that vegetables can be easily mashed with a fork.
