Ingredients
- 300g chicken breast, diced small
- 1 cup white rice
- 5 cups bone broth (chicken or beef)
- 1/2 cup carrots, finely grated
- 1/4 cup pumpkin puree
- 1 teaspoon ginger, finely grated
- 1 teaspoon turmeric
- 1 tablespoon fish oil
Instructions
- Place rice and bone broth in a large pot. Bring to a boil.
- Reduce heat to very low and simmer, stirring occasionally, for 35–40 minutes until the rice completely breaks down into a thick porridge.
- While congee simmers, cook the diced chicken in a separate pan until cooked through.
- Add the cooked chicken, grated carrots, pumpkin puree, ginger, and turmeric to the congee.
- Stir well and cook for another 5 minutes.
- Remove from heat, stir in fish oil, and allow to cool.
- The consistency should be thick and porridge-like. Add more broth if needed.
Storage
Refrigerate for up to 5 days (congee keeps very well). Freeze for up to 3 months. It thickens when cold — add a splash of broth when reheating.
