Ingredients
- 2 tins sardines in spring water (drained)
- 1 cup white rice
- 1 cup pumpkin puree (plain)
- 1/2 cup spinach, chopped
- 1/2 cup carrots, grated
- 1 tablespoon flaxseed (ground)
Instructions
- Cook the rice according to packet directions. Set aside to cool.
- Drain the sardines and mash them lightly with a fork in a bowl.
- Mix the pumpkin puree into the sardines.
- Add the chopped spinach and grated carrots. Stir to combine.
- Fold in the cooked rice and sprinkle with ground flaxseed.
- Mix everything together and serve at room temperature.
Storage
Refrigerate for up to 2 days. Best made fresh. Can freeze for up to 1 month but texture may change slightly.
