Ingredients

  • 400g salmon fillet (boneless)
  • 1 cup white rice, cooked
  • 1/2 cup sweet potato, mashed
  • 1/2 cup carrots, grated
  • 1/4 cup kale, finely chopped
  • 2 teaspoons turmeric
  • 1/2 teaspoon black pepper (tiny amount aids absorption)
  • 1 tablespoon coconut oil
  • 1 tablespoon fish oil

Instructions

  1. Cook rice and set aside.
  2. Bake salmon at 180°C for 15 minutes. Flake and remove all bones.
  3. Steam sweet potato and mash.
  4. Melt coconut oil and mix with turmeric and black pepper to create a golden paste.
  5. Combine rice, flaked salmon, mashed sweet potato, grated carrots, and kale.
  6. Stir in the turmeric-coconut paste.
  7. Drizzle with fish oil.
  8. Mix well and cool before serving. The meal will have a beautiful golden colour.

Storage

Refrigerate for up to 2 days. Freeze for up to 1 month.

Curcumin in turmeric is a potent anti-inflammatory that works at the molecular level to reduce inflammatory enzymes. It's poorly absorbed on its own but absorption increases dramatically when combined with fat (coconut oil) and piperine (black pepper). Salmon's omega-3s (EPA/DHA) work on different inflammatory pathways, creating a complementary anti-inflammatory effect.
