Ingredients
- 400g salmon fillet (boneless, skinless)
- 1 cup quinoa
- 2 cups water
- 1 cup broccoli florets, finely chopped
- 1/2 cup blueberries
- 1 cup zucchini, diced
- 1 tablespoon fish oil
Instructions
- Rinse the quinoa thoroughly and cook in 2 cups of water for about 15 minutes until fluffy. Set aside to cool.
- Preheat oven to 180°C (350°F). Place the salmon fillet on a lined baking tray.
- Bake the salmon for 15–18 minutes until it flakes easily with a fork.
