Ingredients
- 400g turkey mince
- 1 cup pumpkin puree (plain, not pie filling)
- 1 cup white rice, cooked very soft
- 2 tablespoons plain yoghurt (no xylitol)
- 1 teaspoon ginger, finely grated
Instructions
- Cook rice until very soft and slightly mushy. Set aside.
- Cook turkey mince in a non-stick pan for 5–6 minutes. No oil needed.
- Combine rice, turkey, and pumpkin puree.
- Add grated ginger and mix through.
- Allow to cool, then stir in yoghurt (adding it after cooling preserves the probiotics).
- Serve in small, frequent portions.
Storage
Refrigerate for up to 3 days. Freeze for up to 2 months.
