Ingredients
- 2 tins mackerel in spring water, drained (or 300g fresh mackerel, cooked)
- 1 cup quinoa
- 2 cups water
- 1/2 cup kale, finely chopped
- 1/2 cup carrots, grated
- 1/4 cup pumpkin seeds (pepitas), ground
- 1 tablespoon flaxseed oil
- 1 teaspoon turmeric
Instructions
- Cook quinoa in water for 15 minutes until fluffy. Set aside.
- If using fresh mackerel, bake at 180°C for 12–15 minutes until flaky.
- Drain tinned mackerel and break into pieces, removing any large bones.
- Wilt kale in a pan for 1–2 minutes.
