- 1 tin mackerel in spring water (drained)
- 200g fresh mackerel fillet (optional β use 2 tins if fresh unavailable)
- 1 cup brown rice (cooked)
- Β½ cup beetroot (cooked and diced)
- Β½ cup spinach (chopped)
- Β½ cup carrots (grated)
- 1 tbsp fish oil

- If using fresh mackerel, poach in water for 10 minutes until flaky.
- Flake all mackerel into a bowl, removing any large bones.
- Dice cooked beetroot into small pieces.
- Combine mackerel, rice, beetroot, and grated carrots.
