Ingredients

  • 200g chicken liver
  • 300g chicken breast, diced
  • 1 cup white rice, cooked
  • 1 cup carrots, grated
  • 1/2 cup sweet potato, mashed
  • 1/4 cup peas
  • 1 tablespoon olive oil
  • 1 tablespoon fish oil

Instructions

  1. Cook rice and set aside.
  2. Heat olive oil. Cook diced chicken breast for 5–6 minutes until done. Set aside.
  3. In the same pan, cook chicken livers for 3–4 minutes per side. Don't overcook.
  4. Chop livers into small pieces.
  5. Steam carrots (briefly — 3 minutes) and sweet potato (until soft, mash).
  6. Combine rice, chicken breast, chopped liver, carrots, sweet potato, and peas.
  7. Drizzle with fish oil and mix well.
  8. Cool before serving.

Storage

Refrigerate for up to 3 days. Freeze for up to 2 months.
