Ingredients

  • 500g lamb mince (lean)
  • 1 cup brown rice, cooked
  • 1 cup sweet potato, mashed
  • 1/2 cup spinach, chopped
  • 1/2 cup carrots, grated
  • 2 tablespoons fish oil
  • 1 tablespoon coconut oil
  • 1 tablespoon ground flaxseed

Instructions

  1. Cook brown rice until soft. Set aside.
  2. Heat coconut oil in a pan. Cook lamb mince for 6–8 minutes. Drain excess fat.
  3. Steam sweet potato and mash until smooth.
  4. Wilt spinach in the pan for 1 minute.
  5. Combine rice, lamb, mashed sweet potato, spinach, and grated carrots.
  6. Add fish oil and ground flaxseed. Mix thoroughly.
  7. Cool before serving.

Storage

Refrigerate for up to 4 days. Freeze for up to 3 months.
