Ingredients
- 500g lamb mince
- 1 cup pearl barley
- 3 cups water
- 1 cup carrots, diced
- 1 cup zucchini, diced
- 1/2 cup peas
- 1 tablespoon olive oil
- 1 teaspoon dried rosemary (optional)
Instructions
- Cook the pearl barley in 3 cups of water for about 30 minutes until tender. Drain any excess water and set aside.
- While the barley cooks, heat olive oil in a large pan over medium heat.
- Add the lamb mince and cook for 6–8 minutes, breaking it apart, until browned.
- Add the diced carrots and cook for 3–4 minutes.
- Add the zucchini, peas, and rosemary (if using). Cook for another 3–4 minutes until vegetables are tender.
- Combine the cooked barley with the lamb and vegetable mixture. Mix well.
- Allow to cool to room temperature before serving or portioning.
Storage
Refrigerate in airtight containers for up to 4 days. Freeze portions for up to 3 months.
