Ingredients
- 500g kangaroo mince
- 1 cup brown rice
- 1 cup carrots, diced
- 1 cup green beans, chopped
- 1/2 cup beetroot, grated
- 1 tablespoon olive oil
Instructions
- Cook the brown rice according to packet directions. Set aside to cool.
- Heat olive oil in a large pan over medium-high heat.
- Add the kangaroo mince and cook for 5–7 minutes until browned. Kangaroo cooks quickly — don't overcook it.
- Add the carrots and green beans and cook for 4–5 minutes until tender.
- Stir in the grated beetroot and cook for 1–2 minutes.
- Combine with the cooked brown rice and mix well.
- Allow to cool to room temperature before serving.
Storage
Refrigerate in airtight containers for up to 4 days. Freeze portions for up to 3 months.
