Fish & Potato Gentle Digestion Meal

Ingredients

  • 400g white fish fillet (cod, barramundi), boneless
  • 2 medium potatoes, peeled and cubed
  • 1/2 cup carrots, grated
  • 1/2 cup pumpkin puree
  • 1/4 cup peas, mashed
  • 1 tablespoon olive oil

Instructions

  1. Boil potatoes until very soft (15–18 minutes). Drain and mash.
  2. Poach fish fillets in water over medium-low heat for 8–10 minutes until flaky.
  3. Steam grated carrots until very soft (3–4 minutes).
  4. Flake fish into small pieces, removing all bones carefully.
  5. Combine mashed potato, flaked fish, carrots, mashed peas, and pumpkin puree.
  6. Drizzle with olive oil and mix gently.
  7. Cool to a warm (not hot) temperature before serving.

Storage

Refrigerate for up to 2 days. Freeze for up to 1 month.
