Ingredients

  • 400g white fish fillet (boneless)
  • 1 cup white rice, cooked
  • 1/2 cup cucumber, finely diced
  • 1/2 cup zucchini, grated
  • 1/4 cup pumpkin puree
  • 2 tablespoons chia seeds, soaked in 6 tablespoons water for 15 minutes
  • 1 tablespoon fish oil
  • 1 tablespoon coconut oil

Instructions

  1. Soak chia seeds in water for 15 minutes until they form a gel.
  2. Cook rice and set aside.
  3. Poach white fish in a little water for 8–10 minutes until flaky. Remove all bones.
  4. Flake fish into small pieces.
  5. Combine rice, flaked fish, cucumber, grated zucchini, and pumpkin puree.
  6. Add the chia seed gel and mix through.
  7. Drizzle with fish oil and melted coconut oil.
  8. Mix well and serve at room temperature.

Storage

Refrigerate for up to 2 days. Best made relatively fresh due to the high moisture content.
