Ingredients
- 400g white fish fillet (boneless)
- 1 cup white rice, cooked
- 1/2 cup cucumber, finely diced
- 1/2 cup zucchini, grated
- 1/4 cup pumpkin puree
- 2 tablespoons chia seeds, soaked in 6 tablespoons water for 15 minutes
- 1 tablespoon fish oil
- 1 tablespoon coconut oil
Instructions
- Soak chia seeds in water for 15 minutes until they form a gel.
- Cook rice and set aside.
- Poach white fish in a little water for 8–10 minutes until flaky. Remove all bones.
- Flake fish into small pieces.
- Combine rice, flaked fish, cucumber, grated zucchini, and pumpkin puree.
- Add the chia seed gel and mix through.
- Drizzle with fish oil and melted coconut oil.
- Mix well and serve at room temperature.
Storage
Refrigerate for up to 2 days. Best made relatively fresh due to the high moisture content.
