Ingredients

  • 4 eggs
  • 300g chicken breast, diced
  • 1 cup white rice, cooked
  • 1/2 cup pumpkin puree
  • 1/4 cup pumpkin seeds (pepitas), finely ground
  • 1/2 cup spinach, chopped
  • 1 tablespoon coconut oil
  • 1 tablespoon fish oil

Instructions

  1. Cook rice and set aside.
  2. Heat coconut oil. Cook diced chicken for 5–6 minutes until done.
  3. Scramble the eggs in the same pan.
  4. Wilt spinach for 1 minute.
  5. Combine rice, chicken, scrambled eggs, spinach, and pumpkin puree.
  6. Sprinkle ground pumpkin seeds over the top.
  7. Drizzle with fish oil and mix well.
  8. Cool before serving.

Storage

Refrigerate for up to 3 days. Freeze for up to 2 months.
