Ingredients
- 400g duck breast (skin removed), diced
- 2 medium sweet potatoes, cubed
- 1 cup kale, finely chopped
- 1/2 cup peas
- 1 cup carrots, diced
- 1 tablespoon olive oil
Instructions
- Heat olive oil in a pan over medium heat. Cook the diced duck for 6–8 minutes until cooked through.
- In a separate pot, boil the sweet potato cubes for 12–15 minutes until tender. Drain.
- Steam the carrots and peas for 5 minutes until tender.
- Wilt the kale in the pan with the duck for 1–2 minutes.
- Combine all ingredients in a large bowl. Lightly mash some of the sweet potato to create a creamy texture.
- Allow to cool to room temperature before serving.
Storage
Refrigerate for up to 4 days. Freeze for up to 3 months.
