- 400g chicken breast
- 1Β½ cups watermelon (seeded, diced)
- Β½ cup cucumber (diced)
- Β½ cup carrots (grated)
- Β½ cup green beans (chopped)
- Β½ cup rice (cooked)
- 1 tbsp fish oil

- Poach chicken breast in water for 15 minutes until cooked through.
- Shred or dice chicken into small pieces and let cool.
- Steam green beans and carrots for 5 minutes.
- In a large bowl, combine chicken, rice, and steamed vegetables.
- Fold in diced watermelon and cucumber.
- Drizzle with fish oil and toss gently.
- Serve at room temperature β the watermelon is best when not too cold.

Best served fresh. Can refrigerate for up to 1 day but watermelon will release water. Drain excess liquid before serving.
