Ingredients
- 600g chicken thigh (boneless, skinless), diced
- 2 cups sweet potato, cubed
- 1 cup carrots, sliced
- 1 cup peas
- 1 cup celery, diced
- 3 cups low-sodium chicken bone broth
- 1 tablespoon coconut oil
- 1 teaspoon turmeric
Instructions
- Heat coconut oil in a large pot over medium heat.
- Add the diced chicken thigh and cook for 5–6 minutes until sealed on all sides.
- Add the sweet potato, carrots, celery, and turmeric. Stir to coat.
- Pour in the bone broth and bring to a gentle boil.
- Reduce heat to low, cover, and simmer for 30–35 minutes until the sweet potato is very soft.
- Add the peas in the last 5 minutes of cooking.
