- 1.5 cups arborio rice (or any short-grain rice)
- 1 cup pumpkin puree
- 3 cups low-sodium chicken bone broth
- 1 cup peas
- 1/2 cup parmesan cheese, finely grated (optional, small amount)
- 1 tablespoon olive oil
- 1 tablespoon parsley, chopped
Instructions
- Heat olive oil in a large pot over medium heat. Cook the diced chicken for 5–6 minutes until sealed.
- Add the rice and stir for 1 minute to coat in the oil.
- Add one cup of bone broth, stirring until absorbed.
- Continue adding broth one cup at a time, stirring frequently, until the rice is creamy and cooked (about 18–20 minutes).
