Ingredients
- 250g chicken livers
- 300g chicken breast, diced
- 1 cup white rice
- 1 cup carrots, diced
- 1 cup green beans, chopped
- 1/2 cup pumpkin puree
- 1 tablespoon coconut oil
Instructions
- Cook the rice according to packet directions. Set aside.
- Heat coconut oil in a pan over medium heat.
- Add the diced chicken breast and cook for 5–6 minutes until cooked through. Remove and set aside.
- In the same pan, cook the chicken livers for 3–4 minutes per side until cooked through but still slightly pink inside. Don't overcook.
- Chop the cooked livers into small pieces.
- Steam the carrots and green beans for 5 minutes until tender.
- Combine rice, chicken breast, chopped livers, vegetables, and pumpkin puree. Mix well.
- Allow to cool before serving.
Storage
Refrigerate for up to 3 days. Freeze for up to 2 months.
