Ingredients
- 500g chicken breast, diced
- 1 cup white rice
- 1.5 cups water
- 2 tablespoons coconut oil
- 1 cup broccoli florets, chopped small
- 1 cup carrots, diced
- 1/2 cup red capsicum, diced
- 1/4 cup shredded coconut (unsweetened)
Instructions
- Cook rice in water with 1 tablespoon coconut oil for extra flavour. Set aside to cool.
- Heat remaining coconut oil in a pan over medium heat.
- Cook the diced chicken for 6–8 minutes until golden and cooked through.
- Add broccoli, carrots, and capsicum. Cook for 4–5 minutes until tender.
- Combine chicken and vegetables with the coconut rice.
- Sprinkle with shredded coconut and mix through.
- Cool to room temperature before serving.

Refrigerate for up to 4 days. Freeze for up to 3 months.
