Ingredients
- 500g chicken breast, diced
- 2 eggs
- 1 cup white rice, cooked
- 1/2 cup sweet potato, mashed
- 1/2 cup carrots, grated
- 2 tablespoons coconut oil
- 1 tablespoon ground flaxseed
Instructions
- Cook rice and set aside.
- Heat 1 tablespoon coconut oil in a pan. Cook diced chicken for 6–7 minutes until done.
- Scramble the eggs in the same pan.
- Steam sweet potato until soft and mash.
- Combine rice, chicken, scrambled eggs, mashed sweet potato, and grated carrots.
- Add remaining coconut oil (melted) and ground flaxseed.
- Mix well and cool before serving.
