Ingredients
- 2 cups homemade bone broth (see tip for making)
- 1 cup white rice
- 1/2 cup pumpkin puree
- 200g chicken breast, boiled and shredded
- 1 teaspoon slippery elm powder (optional, available at health food stores)
- 1 tablespoon plain yoghurt
Instructions
- Cook rice in the bone broth instead of water for 15–18 minutes until very soft.
- Boil chicken breast until cooked through. Shred finely.
- Add pumpkin puree and shredded chicken to the bone broth rice.
- If using slippery elm, mix powder with a little warm water to form a paste, then stir through.
- Allow to cool, then add yoghurt.
- The consistency should be porridge-like — add more bone broth if too thick.
