Beef & Vitamin E Skin Shield Dinner

This beef dinner is loaded with natural vitamin E sources including spinach, sunflower seeds, and sweet potato. Ingredients

  • 500g beef mince (lean)
  • 1 cup white rice, cooked
  • 1 cup spinach, chopped
  • 1/2 cup sweet potato, cubed
  • 1/2 cup broccoli, chopped
  • 2 tablespoons sunflower seeds, ground
  • 1 tablespoon flaxseed oil
  • 1 tablespoon olive oil
  • 1 teaspoon turmeric

Instructions

  1. Cook rice and set aside.
  2. Heat olive oil in a pan. Cook beef mince for 6–8 minutes until browned.
  3. Add turmeric and stir through.
  4. Steam sweet potato and broccoli until tender (8–10 minutes).
  5. Wilt spinach in the pan for 1 minute.
  6. Combine rice, beef, sweet potato, broccoli, and spinach.
  7. Sprinkle ground sunflower seeds on top and drizzle with flaxseed oil.
  8. Mix well and cool before serving.

Storage

Refrigerate for up to 4 days. Freeze for up to 3 months.

Vitamin E (tocopherol) is a fat-soluble antioxidant that protects skin cell membranes from oxidative damage caused by UV exposure, pollution, and environmental toxins. Sunflower seeds are one of the richest natural sources of vitamin E. Spinach provides additional vitamin E plus iron. Broccoli's sulforaphane supports the skin's natural detoxification processes.
