Ingredients
- 400g beef mince (lean)
- 2 cups cooked rice (leftover rice works perfectly)
- 2 eggs
- 1 cup mixed vegetables (carrots, peas, corn, beans), diced small
- 1/2 cup capsicum, diced
- 1 tablespoon coconut oil
- 1 teaspoon turmeric
Instructions
- Heat coconut oil in a large pan or wok over medium-high heat.
- Add the beef mince and cook for 5–6 minutes until browned. Break it apart as it cooks.
- Push the beef to one side and scramble the eggs on the other side of the pan.
- Add the diced vegetables and capsicum. Stir-fry for 3–4 minutes.
- Add the cooked rice and turmeric. Toss everything together and cook for 2–3 minutes until the rice is lightly toasted.
- Remove from heat and allow to cool to room temperature.
- Portion into containers for the week.
Storage
Refrigerate for up to 4 days. Freeze for up to 3 months. Reheat gently or serve at room temperature.
