Ingredients
- 500g beef mince (lean)
- 2 medium sweet potatoes, peeled and cubed
- 1 cup green beans, chopped
- 1 cup carrots, diced
- 1/2 cup peas
- 2 cups water or bone broth
- 1 tablespoon coconut oil
Instructions
- Heat coconut oil in a large pot over medium heat.
- Add the beef mince and cook for 5–7 minutes, breaking it apart, until browned.
- Add the cubed sweet potato, carrots, green beans, and peas.
- Pour in the water or bone broth and bring to a gentle boil.
- Reduce heat to low, cover, and simmer for 20–25 minutes until the sweet potato is soft and easily mashed.
- Remove from heat and allow to cool. Lightly mash some of the sweet potato to thicken the stew.
- Portion into containers once cooled to room temperature.
Storage
Refrigerate in airtight containers for up to 4 days. Freeze portions for up to 3 months. Thaw overnight in the fridge before serving.
