Ingredients
- 400g beef mince (lean)
- 3 eggs
- 1 cup spinach, chopped
- 1/2 cup carrots, grated
- 1/2 cup cottage cheese
- 1 tablespoon olive oil
Instructions
- Heat olive oil in a large pan over medium heat.
- Add the beef mince and cook for 5–6 minutes until browned, breaking it apart.
- Push the beef to one side of the pan. Crack the eggs into the other side and scramble them gently.
- Add the chopped spinach and grated carrots. Stir everything together and cook for 2–3 minutes until the spinach is wilted.
- Remove from heat and allow to cool slightly.
- Stir in the cottage cheese once the mixture has cooled a bit.
- Serve at room temperature or portion for later meals.
Storage
Refrigerate in airtight containers for up to 3 days. Best made fresh or within a few days due to the eggs. Can be frozen for up to 1 month.
